I am looking at brewing a coopers extra stout inspired beer this week.

Inventory:
  • Marris Otter, roast barley, wheat, carafa 2, caraaroma
  • Hops to bitter to whatever including some styrian goldings (thinking of grabbing some challenger too)
  • 6 pack of coopers mild to harvest yeast

Current plan:

OG 1.063
IBU 36

70% marris otter
10% wheat
8% roast barley
2% carafa 2
2% caraaroma
6% cane sugar

Recultured coopers yeast.

Am I on the right track? Is it worth thinking of adding some later hops (doesnt need to be an exact clone)
 
Pretty sure coopers use POR for their stout, I'd say it's a fairly simple malt bill too.
 
Id get rid of wheat. Add some crystal. Probably no need for 2% carafa with that much rb. Up the bitterness a touch and yeah use por if trying to get close to coopers.
 
Definitely want more bitterness to balance... I would be targeting at least 50 ibu with that og, maybe even a 1:1 bu:gu for greater balance. What temp are you planning on mashing at? This will also help determine the level of bitterness you want to target.
 
Yeah I think upping the IBU sounds good. Was probably going to mash at 66.
