Hey guys,
I'm going to make a cyser... I live in the Melbourne region. Any recommendations for a good brand of apple juice I should use? I realise it shouldnt contain any preservatives in it except for vitamin C, however, hit me with some brand recommendations!
Cheers,
Luke.

Ideally you'd want a cider must to add some of the complexity (tannins) that honey must lacks on its own. We make our cider just by juicing our own apples which ensures we can get some crab apples and tart apples in there to round out the flavours and I wouldn't have it any other way. Most apple juices in the store are selected for sweetness, nothing else - maybe your best option is a can kit for cider!

Straight up long life apple juice will work. Aging is your friend, the honey influence comes back. A lot.

ive used the berri apple and it works well.

Has anyone tried using the Nudie's nothing but apples juice? I was thinking with going with that. I don't think long-life is an option because of the preservatives. However, would there be any adverse effects of using Nudie's, given that your supposed to consume the juice within 3-5 days and keep it refridgerated at all times? I do you think as soon as fermentation kicks off it won't matter?

You can see a link for the product here: http://shop.coles.com.au/online/mobile/national/nothing-but-100%25-juice-fresh-apple

I used 100% nudie stuff in a cider and it was very good in my opinion, way better than UHT juice. I bought it half price reduced to clear with a only a day or 2 left on expiry and it was in the keg for at least 3 months - you don't need to worry about it requiring refrigeration as the ferment preserves it.
