0 min hop addition is in the secondary, 7 days after primary.
WLP23 Burton Yeast was what I had on hand at the time, but US-05 would probably be ideal.

Yeah a bit OTT with the bitterness; a little of Topaz goes a long way and I didn't want to scimp on the 15 and 5 minute additions. This beer is my first using Marris Otter, hopefully I haven't overpowered it and it provides a good background.

I've made a single hop beer with Topaz once before. Only bittered to 40 ibu, less later additions, with pilsner malt as the base and US05. Really nice drop actually, good showcase for the hop character; resinous, distinctly herbaceous without being grassy (some mates reckoned it smelled like weed!), a fair whack of citrus and passionfruit in there too, with a relatively smooth bitterness. Especially for what it's worth, it's a damn good hop!
