Medieval Brew

Brewer's Notes

Got this recipe from somewhere and have tried it a few times now. Very simple, very different recipe. Very earthy, good with red meat.
To 26L of water add the following for 60 min-3kg Amber Malt Extract, 150gms Light Crystal Malt, .6kg Yellowbox Honey, 30gms Fuggles Hop Pellets. Add 9 Chamomile tea bags at 35 minutes (remove at 5 mins), at 30 min add 30gms Fuggles Hop Pellets & 125gms French Oak Chips. Use 2 US 05 yeast sachets. Not 1 but 2, yes 2.

Malt & Fermentables

0.15 kg Bairds Dark Crystal
3 kg Coopers LME - Amber
0.6 kg Clover Honey

Hops

Time Grams Variety Form AA
30 g Fuggles (Pellet, 4.5AA%, 60mins)
30 g Fuggles (Pellet, 4.5AA%, 30mins)

Yeast

23 g DCL Yeast US-05 - American Ale

Misc

25 tsp. Oak Chips
23L Batch Size

  • Bitterness 26.6 IBU
  • Efficiency 75%
  • Alcohol 4.81%

Fermentation

  • Primary 7 days

If you like something a little different give this a try.
I have made it a few times with one or two yeasts but the two yeasts win hands down every time for some reason.

Any ideas will be more than appreciated as I would like to keep making this brew and trying new things with it.
 
I attempted an all grain version.
LHBS were out of french oak, so I used american oak... gave it a weird bourbon flavour.
I would've swapped a bottle but you're in Vic, and mine's definitely not worth the postage!
Honestly, it was like being assaulted by flavour on three fronts, and not in a good way.
Glad yours is a winner though!
