I brewed a 22L batch of porter on 18/11/07 and prepared the yeast into a small starter using the a dash of the LME i had floating around. It got off to a roaring start in the jug and started to tear through my wort when pitched. It's now 3 days later (21/11/07) and the gravity has dropped from 1.059 to 1.022, I was thinking about racking to a secondary because of a large amount of sedimentation and firing another brew up in two days time? Yeast was S-04.
I'd love a quick lecture from someone. Cheers.

Personally, If I rack to secondary, it is when the krausen starts to drop out.

Also, reuse the yeast from your primary fermentation (which is the bulk of the sedimate), just scoop it out with a sanitized glass and pitch that onto your next beer. There are benifits from washing the yeast first, but I have made award winning beer without doing this.
