I currently have my second AG in the primary, a wheat. The first AG & partial I left in the primary for two weeks after reading Palmer's book and other comments on this site. Both brews were good, the first AG a bit light on the body, but definantely drinkable.
I have also read much on racking and seconadry fermentation. I am considering leaving the current brew in the primary for three weeks before bottling. Does any one regularly do this and what is the result? Is it getting too long with the chance of off flavours.
