My grandmother is Polish and my grandfather Ukrainian. We used to have these things called "platski" which was this potato sludge that she'd shallow fry into small hot cake style things. I'll see if I can get the recipe from her and see if she's heard of doing this with chicken. I'm hoping it's right because this sounds ******* epic!!!
