We have just been putting in some reasonably priced cask port and letting it sit in the barrel. its amazing what at least 6 months in the barrel can do. Every so often we'll top it up with some of our top shelf ports (can't think of the names at the moment) but in all honesty, the flavours that develop from cheap-ish port in the barrel really are incredible. We had a blind tasting with some family members about 6 months ago with 4 ports. 2 top shelf, 1 cheap-ish port un-barreled (for lack of a better term), and 1 barreled.
The barreled won hands down.
