I would like to thank everyone for the information you have sent me. I have just tasted the latest brew i finished with no sparge and it so much better than anything i have ever done before. This doesnt mean to say i wont try the biab method. I reckon i am going to have a lot more mates inviting themselves over for a beer. Cheers Everyone much appreciated.
 
IMHO tartaic acid is a good choice as its very stable under mashing and fermenting conditions
