I'm thinking of making enough brew for 60 long necks in a single 30 litre fermenter; and water it down for bottling.

But to get 44 litres at 5% abv I need 29 litres at 7.6% abv.

Will Saflager dried yeast go this high?
Does anyone know how high it will go?

I reckon you probably will be able to do it. But i'd recommend a really beefy starter and in order to get/keep the yeast going strong you'll get a less clean lager taste. Could still try fermenting at lager temps but pretty sure you'll have to bring the temp up to get it to finish.

I recommend emailing fermentis and asking them.

I know for a fact S-189 (you can get it from craftbrewer) will ferment clean up to 11%. I'd be using that for this application.

I'm pretty sure the PDF files on each yeast on the fermentis site tell you the maximum abv they can handle.

Jono.
