My lime tree has finally started dropping fruit, so I've grabbed 1.5kg for some lime marmalade, as per my Mum's recipe.(1:1:1 ratio)
1.5kg limes (sliced finely)
1.5kg sugar
1.5L water

Boil for 60min
As per my mum's words "get a teaspoon amount, pour it on a saucer and make sure it goes a bit jelly-like."

Nearing the end of the boil now. It was hard resisting some hop additions.

This should be good on some toast for a hangover brekky

edit: finished and kitchen is all cleaned up. Got 8 jars worth. Tastes yum.
 
Hang on. You hopped it? That is a hectic amount of sugar for marmalade IIRC. Need to look for my recipe now. I really don't remember it being that crazy. How long did you boil for?
 
hahah, no I didn't hop it.... it was just the hour long boil that made me think something was missing. :D
Boiled for an hour, then some...
Not sure of the sugar... just going off what my mum said.
Had some on toast this morning. Awesome. Brought in a jar to work for morno's.
 
If you're planning on eating it fairly young, then you definitely don't need as much sugar
