Lower Brew Temps With Us05

Hi All,

Have been using Safale Us 05 for my last couple brews and brewing at approx. 18-19 degrees with a temp controlled chest freezer.

I naturally assumed that ferment would take a bit longer than a standard ale yeast at hotter temps, but how long?
Is 10 days about right? Og 1048 Fg 1012
Also would you have to take gravity readings over a longer period of time if brewing at cooler temps to check that fermentation had finished? I have a sneaking suspicion that I may have racked into cc plastic too early. Beer tastes a bit sweet like unfermented sugars. :unsure:

Interested if anyone has experience with this yeast and lower temps.

yes at lower temps i guess it will take longer, less energy in the system but lots of food for the yeast so they eat slower and therefore there is less mitosis. I always wait for the airlock to stop bubbling away every few seconds( however these things do lie) and take 2 or 3 consecutive gravity readings about 24 hours appart if there all the same theni assume fermentation has stopped. during the winter when i would leave my beer fermenting in the shed it would take a few days more. however the temp your using isn't that low safale us 05 is used at between 15-24C so i would look at signs that your beer is still fermenting(make sure the yeast is till doing its job), and take a gravity a day or 2 appart and see how you go. the link is info on the yeast your using http://www.fermentis.com/FO/EN/pdf/SafaleUS05.pdf

Good to hear you have temps under control, 18-19 is apparently spot on for US05! And from my experience I have only had good times with it at that temp!!

Ferment time/s are a bit unpredictable due to many reasons, including brew ingredients, health of yeast, size of moon and so on.... Maybe an AG wort might brew a little quicker than a kit but who knows - each ferment to its own!!


You will end up with beer!

US05 can get pretty sleepy at the lower end (15 ish?).
 
I currently have a batch of strong scotch ale in the fridge fermenting away at 12deg C with US-05. The last time I did this it took about a month to finish but the staring gravity was around 1.090. I find US-05 a very forgiving yeast in this respect.

Probably just trying to find a reason for the taste in my beer I was not expecting.
I now have 1 full keg, 1half keg and a 20 litre plastic full in the fridge. With a bit of stock in the fridge I think I'll brew today and not be afraid to leave it in the fermenter a bit longer.
Hopefully nobody drops around for a session in the next few weeks! :chug:

Here is my data from my previous brew. I had the wine fridge set to 18C but the brew wet off a little higher around 19C....

I am still learning so I took a reading most every day. Sacrificing a little brew in exchange for learning something... :)

My OG was a bit lower, but it was all over by day 8. However I was waiting two weeks no matter when it finished fermenting... again trying something different to get a better beer...

The only time I take a sample nowadays is when I tip into the fermenter - and when I 'think' its finished. If the FG is where it should be into the 0 Deg C fridge it goes.

New Years resolution - dont worry about that over which you have no control.

By the way - I wouldn't go below 17 with US05.

Yep, I was wondering what was happening each day in the fridge. I found a lot of the alcohol is created in the first few days.

I normally wait til it stops bubbling, however it bubbles so slowly in the fridge, it is difficult to work out if it has stopped. My current brew is using US-05 with the Fridge set to 16C which is yielding a temp of 19C for the first few days of the brew.

Again still learning... ;)
 
I Have brewed 23L batches with one S-05 satchel at 16 degrees with good aeration.
With a re-hydrated fresh satchel it takes about 7-8 days to finish.
 
I use S-05 regularly and my fridge is set to 19c. Normally takes 4-7 days to get to 1012 and I just checked my records - the last 7 times I used it it stopped on 1012 every time. Its probably because my beers are similar. Its My favorite.
