Up the bitterness as M suggested. there is a bit of malt in there and you'll hardly notice. I wouldn't use Cascade as a bittering addition as there are better uses for it and many better smoother bittering hops. Simcoe, Amarillo, Warrior, Magnum, target, Northern Brewer.

I'd also be include move your 10m addition to 15 or 20 but 10 will be fine. I'd prob increase the total amount to around 1.5-2g/l for a bit more 'fruit'. that would increase your 7g additions to say 9 or 10 and the 14g addition to 18-20g.

malt base looks tasty.

OR if you like your hop schedule - drop the munich and vienna and swap it for straight pale malt. lovely.

Also, i guess it is more of a personal choice thing, but with those 3 hops would you use cascade as the bittering? Or something else?

stef,

Like Rooting Kings said, I'd use something else for bittering. Simcoe or even Pride of Ringwood if you've got some.

As for hop schedule, a mix of Cascade, Amarillo, Simcoe, Nelson Sauvin or Galaxy. Three of these will give heaps of fruit.

Perhaps -

PoR - 60 mins
Galaxy - 10 mins
Simcoe - 10 mins
Amarillo - 10 mins
Galaxy - 0 mins
Simcoe - 0 mins
Amarillo - 0 mins

To a total around 30 - 40 IBU's depending on you malt bill.

Play around with the amounts and the times on the hop additions to suit.

If you like fruity hops then you really can't go wrong with any of these. Give it a go and then adjust amounts / combinations next time you brew something similar. Lots of possibilities.

Have fun,

Scott
