First brew for the new year, a Gerard special ND Fresh Wort Wheat with K97 dry.
Never used this yeast before, the fresh wort has been lying around for a few months (bought to cover emergency's while dealing with infections last year).
36 hours after pitching and no activity (Pitched dry, didn't prove the yeast prior to pitching but I'm sure the yeast has not been mistreated). Wort @ 22 odd degrees in the ferm fridge.
Is this a typical lag time, I've a feeling I'll be pulling another yeasty out of somewhere this evening.
