K97 Lag Time

First brew for the new year, a Gerard special ND Fresh Wort Wheat with K97 dry.

Never used this yeast before, the fresh wort has been lying around for a few months (bought to cover emergency's while dealing with infections last year).

36 hours after pitching and no activity (Pitched dry, didn't prove the yeast prior to pitching but I'm sure the yeast has not been mistreated). Wort @ 22 odd degrees in the ferm fridge.

Is this a typical lag time, I've a feeling I'll be pulling another yeasty out of somewhere this evening.

I've used K97 three times and each of those times it has taken around 36-48 hrs before there was any airlock activity.

I'd give it a little more time.

BTW, two brews were done with proofed yeast and one was just sprinkled.

I've only used k-97 once, and it took about 48hours to take off for me as well.

Same thing was said on a few other forums I have read. Just takes a while to really take off.

i ended up throwing another pack of k-97 coz she didnt seem work, but low and behold two days later the yeast started to come alive :blink:

seems to be very slow starter ( didnt need the second pack of yeast)

it ended up making a very nice wheat beer

In my experience if you add K97 dry to a wort it will takes ages (more than 36 hours) for fermentation to get going, but with rehydration (and good aeration) the lag time is usually less than 12 hours.

It will also take a fair while for the yeast to fully drop out post-fermentation (at least 2 months) - adding some weizeny character to the beer until it fully clears.
