I've drunk all my homebrew and I'm still worried.
I would love to brew on my back deck, which is huge, and 2/3 of it under cover. However, I am too scared to do it, as I have 5 fruit trees within 10 metres of the back of the house, backed up by a vegetable garden. I just feel the chances of some wild yeast floating about are too great.
Hence I brew in my garage, downstairs. I use an immersion chiller, and usually have my wort into the fermenter within about a hour, and pitch my starter then. I ferment and bottle down there as well. Fortunately, I have never had an infection problem ever with any of my brews. Let's hope it continues.
