On the pH side, this is affected, I shoot for approx 100ppm of calcium overall, but we do add in about 200 of lactic acid if off target. We measure pH right the way thru. It's a thin mash, so dilution happens.
For fatty acids it is a contact time situation, the warm mash tun and 3-4 hours contact will dissolve in. Sounds a long time, but my old mash tun was 20 mins mash in, 60 min rest, 15 record, 2 hours run off. On the HEBs I have a 10 mash in, 10 recirc, 25 min run off.
Hammer mills are expensive and a strip mill was subbed in. We have got 93% on average but in the last month it has edged off some. That said we swapped out to a different grade sheet, so we will drop the mill gap to a finer crush. Coppers actually get about 102%, I think they do a weak wort recovery?
