Would using this system affect the mash pH by much? (if so, is some sort of water treatment required?)

Only difference to the mash is how the grist is ground. Mash filters can cope with flour-like fineness, so hammer mills are used instead of rollers. I don't see how this would affect anything in the mash other than efficiency (and maybe the impact of astringency slightly as the husks get all ground up too)

It's pretty amazing/interesting seeing the dried grain biscuits coming out of the filters afterwards.

(for the record I BIAB and squeeze the bag, and I've never noticed tannins)

Hey fellas

On the pH side, this is affected, I shoot for approx 100ppm of calcium overall, but we do add in about 200 of lactic acid if off target. We measure pH right the way thru. It's a thin mash, so dilution happens.

For fatty acids it is a contact time situation, the warm mash tun and 3-4 hours contact will dissolve in. Sounds a long time, but my old mash tun was 20 mins mash in, 60 min rest, 15 record, 2 hours run off. On the HEBs I have a 10 mash in, 10 recirc, 25 min run off.

Hammer mills are expensive and a strip mill was subbed in. We have got 93% on average but in the last month it has edged off some. That said we swapped out to a different grade sheet, so we will drop the mill gap to a finer crush. Coppers actually get about 102%, I think they do a weak wort recovery?

If you guys want to see the system run I am more than happy to do Saturday double brew in he new year and let you guys go nuts. It's a bunch of fun and a bit of a head trip. Will also give demos on eating a breakfast burrito in <10 bites and loop line cleaning.

I didnt notice last time i was out, but do you guys cut off the last runnings? I have heard that HEBS can increase polyphenols and aldehydes but typically only in the last runnings?

Having seen a double batch fly though the system i can assure you it is worth seeing. Amazing speed this thing has.

The main polyphenol extraction happens with a pH rise at the end ours is to quick to catch and also does not have the exposure time in a latter tun. Also the sheets hold back any loose matter which will also contribute

Yep - would not go back to a lauter tun, I started late and hung over like hell this morning at 9.30 and was finished at 2.30 with almost an hour of delays due to some engineering work being done ... It's a bit criminal

Thanks mate, simple recipe and we change the hops each batch. It pisses the boss off, probably why we keep doing it. This last one is old school, ekg, willamette, Nelson and simcoe ...
