A week and a bit ago my father asked me to brew a beer for my mum's 70th which is next week.
Not enough time really.
I basically did everything wrong for this brew and it has forgiven me by turning out ok..

I fermented at ambient Melbourne weather, trying to minimise the weather conditions with wet towels and bottles of ice.
I only allowed it to ferment for 5 days (us-o5 was the yeast)
12/2/15
straight into the keg with some gelatine and forced carbed 300kpa for 24 hours
13/2/15
dropped to serving pressure.
14/2/15
tasted pretty bang on to what I was aiming for
clear enough that I'm happy.
Put the urn back on today to brew a similar beer which I intend to treat a bit nicer.
I don't recommend the rush through but I'm pretty happy with the product when it went from cube to glass in 7 days.
