How do I open this properly without resorting to cutting it open with a knife

Got to find the correct end of the string.
Once you do that its a matter of pulling the string and it just comes of in one shot.
I did it jus the other day on a sack of Powells.

yep - like johnno said. There's usually 3 strings, often one with the different colour -thats the one you need to cut the end off and pull. but from the correct end.
 
If its got double stitching on one side, face it towards you and start on the left hand side..

the mystery is no longer!!!!!!!
 
I got it open.

You have to start from the RIGHT and pull both string together away from the bag at 45*

I no longer have 25kg...now down to 22 :party:
 
The info on how to open Weyermann bags is on their site. They always stitch the bags the same way. so if you always have the label facing you, it is fine.

Joe White bags can be stitched from either side, so you have to look at each one carefully before you cut the strings.

I am lead to believe that for JW malt bags the end to cut is the one with the shortest dangly bit (technical term). I believe this also works for Powells.
