I have f**ked around with heaps of hot water systems lately and i have found that they are very primitive and can be used for all sorts of stuff.
Problem would be, an old storage type HWS that has been in use for a while is full of dirt/mud and has calcium looking deposits growing over the fitting on the inside, bit rank...
a new stainless tank HWS would be ideal, if your keen to bypass the thermostat much like we do with our fridges for temp control.
