Hi guys, I am looking for an AG recipe to make the best use of some hops floating around in the back of the freezer.

I have approx 20-30g of the following.

  • Amarillo
  • Cascade
  • Goldings
And varying amount of the following.
  • Nelson Sauvin - 50g
  • Saaz - 100g
  • POR - 50g
  • Northern Brewer - 50g

No grain as of yet and some US-05 sludge in the fridge but would prefer to try a different style of yeast as my last 3 brews have used the US-05.
Also haven't bought a fridgemate yet (next item on the list) so controlling ferm temps is not an exact science at the moment.

Any thoughts or advice greatly appreciated.

You have enough hops for a number of brews. No temp control = ale yeasts. Nothing wrong with US 05 as a very good all round ale yeast.


Cascade / Amarillo makes a nice American Pale Ale

Nelson Sauv is great by itself as is Northern Brewer but drank an interesting brew with both recently and it went doen a treat.

POR with Saazs at the end makes a nice pale ale

The Goldings there will do well in an english mild or bitter.


Don't try to combine too many different varieties as one can overpower the other or add a combination of flavours that spoil the beer drinking experience.
 
Id say make an APA (not a fan but you have the hops)

Bitter it with the northern brewer.
mix together all the cascade, amarillo and Nelson Sauvin and devide into 3 equal lots.
Add these lots at 20 min to go, 10 min to go and flame out.

1.048 and about 35 IBU.

Also make a pale ale with POR to bitter, some EKG at 20 min (say 2/3g per liter) and finnish with 1g per liter of SAAZ at flame out.
1.048, 28 IBU.

Both will be yummy

+1 with the POR plus Saaz. I'm going to do a Mainstream Aussie Lager with the above (POR on order from Ross ATM) but cheat and make it a quick Pseudo Lager with Nottingham (Notto claims to make a good lagerale if kept at below 15).

My thoughts:
4 kg Galaxy mashed 68 degrees
800g dex or even 400 dex / 400 raw sugar

20g POR 60 mins
10g Saaz 20 mins
10g Saaz 5 mins

No prize winner but I want to experiment to see what a mainstream Foster Group Aussie megaswill might be like if they actually upped the grain bill (Fosters group normal ratio would have the above at 3.36kg malt and 1.44kg sugar according to Roger Protz Ultimate Encyclopedia of Beer :eek: ) then put some real hops in it! I don't mind the likes of an icy Melbourne Bitter on a hot day.
 
I like the sound of that Nottingham yeast as I wanted to try something without US-05 for a change.

I have a spare fridge that fits my fermenter in but as I said no Fridgemate as of yet. Is it advisable to use a lager yeast and ferment the batch in the fridge if I can get a rough idea of the temps my fridge will keep it at.

I have a digital thermometer with a probe on 3m of cable I can keep an eye on temps with, or will the variance of temp be to much for the yeast and result in a bad beer?

You can just use the fridge as an insulated container (i.e don't turn it on) and this will help reduce temperature fluctuations (warming days, cooling nights). If it starts getting too warm in there, then throw in a pet bottle or two of frozen water, just to help reduce the ambient temp inside the fridge.
