Long story, but I was aiming to try a stone and wood pacific ale extract recipe but somehow walked away with cascade hops instead of galaxy.

I now have
1.5 kg light LME
1.5kg wheat LME
Lots of cascade
Approx 40g Amarillo
Us-05

My first attempt at using the kit and extract spreadsheet doesn't seem to be working for me?
Anyone want to help me out with boil times and hop additions.

Given that i dont have the galaxy hops, i am not too stressed about trying to get a stone and wood pacific ale.
More a case of making use of what i have here...


Recipe: 109 Stone & Wood Pacific Ale
Style: American Pale Ale
TYPE: Extract

15.00 gm Galaxy [13.40 %] (10 min) Hops 9.9 IBU

1 Pkgs American Ale US05 Yeast-Ale

Bring
4L of water and approx 520g of the light extract to the boil. Add 10g Galaxy hops, after 10 minutes add another 15g Galaxy hops, after another 10 minutes take off the heat and add the final 20g Galaxy Hops. I usually put the lid on the pot for the last 2 minutes so that the steam sterilizes the lid.

While this is boiling add a few litres of water to the fermenter and then the rest of the malt extract, stir thoroughly. Cool the pot in a sink of cold water and then add to the fermenter (I don't strain the hops out). Top up to 23L. Pitch the yeast and ferment at 18C. I bottled after 3 weeks.
 
Not sure if this is the right way to go about it but I quickly threw this into beer smith and then added cascade at same boil times..

this should give you an indication of the different amounts of hops required to get the same IBU's.

With your extract and those hops you could easily do a Dr Smurto Golden Ale instead, will give you a nice tasty drop.

Actaully the last brew i did was just that. Although it was with a hopped extract (coopers draught from memory + light extract.
I also steeped some grains for that.

I am pretty new to this so struggling with alternating ingredients etc.

Sorry rob, been busy but just want clarify... I don't have any galaxy. Or is the above recipe indicating that cld substitute each of these?
 
The above is not a recipe..

I have simply put in each hop and adjusted the quantity to get a similar IBU.

Only use
ONE twenty minute addition
ONE ten minute addition
ONE dry hop.

which one you choose it up to you, you could do a mixture if you like

as an example
16g Amarillo at 20 minutes
36.5 Cascade at 10
dry hop with 10g Amarillo 10g Cascade (dry hop doesn't add IBU's)
 
Why cant you just put all the hops in at one time?

I have been doing this for kits. Does it bring out the flavour more if you bring the stuff to the boil?

You boil them for different times to dial in the particular characteristics of a hop you a after, eg aroma, flavour, bitterneess. See here for a rough guide:

You'll get mostly flavour from the Amarillo, mostly aroma with the dry hop and a bit of both with the big hit of Cascade in the middle.
 
The beauty of ingredients are that they change depending on how they are used.

If you make a tomato pasta sauce out of fresh tomatoes, you want to cook it slowly for a while to "cook out" the acidic nature of the tomato.
Fresh Basil as another example is highly perfumed compared to basil that has been cooked for 30 minutes.

I rare steak from the same beast is completely different to a well done steak.

The reason you don't throw all the hops in at the same time is because you are trying to unlock different attributes of the hops depending on what you are hoping to achieve.

as the table above by TehCrucible, if you were to add all of your hops as an example at 60 minutes, you would end up with a highly bitter beer.
Dry hop the lot and you won't have enough bitterness to balance it out.

You can't build a recipe unless you have a game plan, understand the ingredients and practice.
 
As per the graph posted above by that Crucible dude, the Best additions, IMHO
60, (40), 20, 0 mins; and Dry

60 - basically just bittering
(40 - mainly bittering, maybe a little flavour)
20 - flavouring.
0 - aroma, maybe a little flavour
Dry - aroma
Sure you can pop in lots of additions all over the place, but the simple ones are: [60 or 40], 20, 0, Dry.

Basically i cram as many IBUs as i can into the 20min addition because i'm young and, like Public Enemy, i hunger for more Flava.*




* not that young, really.
