I've got -
Code:
Ammerilo.    25g at  10.5% AA
Chinook.      45g  at  13.4% 
Spalt.            100g at 5.9%.
Tettnang       45g at 3.2%
Hallertau.     100g at 3.6%
Wai-iti            100g at 4%
My general aim is to make a number of smaller batches so I have some variety.

I don't like the estery Belgium beers or hop monster so what I'd like to know is what types will let me use up those hops?

The Spalt can go in a dusseldorf alt.
Ammerilo n Chinook in 60 min IPA.
Hallertau n tettnang in Roggenbier

But I still left with wai-iti a lot of spalt n hallertau mit???

Go a SMASH (single malt and single hop). Sounds like it'd be nice with a Pilsner SMASH - let the hops shine.
 
IPA Bitsa. Mix them all together. Calculate an average IBU level and throw em in 10 min to flame out. Saving an amount for dry hopping? Or your difficult choice of separating them into various divided batches and imagining the golden liquids that can be had.
Actually I've never done this but I will do it. I have a small shitload of various hops that just get left behind. I've gotta make a bitsa mix brew sometime.
