Has anyone tried this type of cooking ?

I saw the Masterchef episode a few weeks back with Fergus Henderson cooking a Pigs Head and Pigs tails, the SWMBO had a pigs head ordered in at the Local Butcher this week and I am going to have a go at cooking it tonight.

I will post pics and would look forward to feedback on experiences cooking this type of stuff ?

I've never done it myself but I have been aware of the rising interest in it (and won't go into the faulty logic behind doing it for any reason other than you think it is tasty). I have noticed here in China that when Westerners talk about this sort of thing they still talk mostly about the tasty outside peices - these guys don't muck around with the head to tail business.
 
Well here it is:

Shaved and ready to go.....

3 Tuscan Onions
8 Cloves of Garlic
500ml White Wine
250ml Red Wine
250ml Chicken Stock
A few sprigs Rosemary
Salt
Pepper
Caribbean Style Rub underneath (Cinnamon, Cloves, Nutmeg, Brown Sugar etc....)
Dollop of Lamb Fat

The aftermath.

Whilst there was a lot of fat, there was a lot a superb sweet brown and white meat, even the SWMBO and my son ate some and enjoyed it, and they are both extremely fussy about what they eat !

I would definitely do this one again :D
 
Nice, very nice .. but next time make sure you get the ears too. Tasty!
 
Heh, doesnt do much for me...... ill stick to his arse :)
