..... Using a can of Coopers/Morgans (or whatever) wheat beer plus additional dry or or liquid malts?

I'm not beyond steeping cracked grains but would prefer to stay away from hopping and 60 minute boils at this stage.

Dry hopping would not take me out of my comfort zone either ;)

My Pièce de résistance is a Safbrew T-58 Yeast which I understand makes a great witbier. I also have Belle Saison.
 
Just found this online so might give it a go, using Safbrew T-58 Yeast or Belle Saison instead of the kit yeast.

1 Can Morgans Wheat Beer

500G Dextrose + 500G Light Malt

250g malted wheat grain

15g coriander seed

zest of 2 oranges

15g Amarillo hops

1 kit Yeast

Lightly crush the grain in a tray with a beer bottle or borrow our grain mill. Bring it to a gentle simmer in 4L of water for 1/2 an hour. Strain the liquid into the fermenter and add the beer mix and sugar. Ferment in the usual manner. Come top up day add the crushed seeds and zest in a stocking - not your fish nets - and allow to finish. 2 days before bottling make a 'hop tea' with the hops and a cup of boiled water, seep for 10 mins and strain this into the fermenter.
