Ginger beer stopped doing anything?

Hey so its my first time brewing and I made a mix and in the fermenter it was bubbling and letting off pressure hard for the first 3 days but now there is no bubbling or anything visuyally happening and whilst the vessel is still pressurized its not letting off any excess pressure so I assume none is being created.

the recipe I used is as follows.

2kg Dextrose
1kg light malt
1kg maltodextrin
15grams of lalvin ec-1118 yeast
1kg shredded ginger
12g yeast nutrient
12g citric acid
500ml lime/lemon juice
19L water initially topped up the fermenter once everything added to reach 27 litres

I'm thinking it has to either be the sugar or the yeast nutrient thats the issue if there is an issue at all
any ideas or tips would be greatly appreciated cheers legends

The initial gravity was 1.053, I gave it a bit of a gentle shake up and now once its settled i am actually seeing some bubbles but not a lot
 
It's always wise to be patient. I've never made ginger beer, but I used ec-1118 to make some awful ciders years ago. Take a hydrometer reading if curiosity gets the better of you. That champayne yeast can be a real "zombie".
