I need some help with these extract recipes I came up with

The plan is to brew one 25L batch of each before October so I can have an Oktoberfest style beer day

Feel free to rip into the recipes if I have used the wrong malts/hops or quantities there of

You won't need the Caramalt for the Alt and I'd use some Spalter hops for at least your flavor addition.
150g of melanoidan in the Pilsner is going to be pretty intense, I'd drop that to 100 max.
The weizen I'd go with either the Vienna or the caramunich but not both.
Just my opinion though.

For the Dunkel i'd adjust the following:

Go a big whack of Munich (it can convert itself), a pinch of Carafa for colour (0.5-1% of the Munich value) and DME, nothing else. To make it a dunkelweizen sub the DME for WheatDME and a touch of melanoiden/munichII to up the richness if you wish.

In other words:

50% Munich
50% DME
1% carafa special II (choc malt)
 
Fourstar, I was under the impression that Munich I and II have to be mashed (as opposed to the Cara- family) also Melanoidin? Or do you mean doing a minimash for an hour? (easy enough)

Yep, mini mash them. It appears thats what the OP is doing as they have Ale and Pils there too (atleast i hope they are). By 'coverts itself' I meant Munich can convert itself in a mash alone i.e. does not require extra enzymes from pils malt etc. Melanoiden on the other hand needs help from munich or a light base malt to aid in conversion.
 
I've done several mashes before, its no problem

I'm almost finished my 3 tier AG setup but as I have 2 fermenters I wanted to do 2 different brews simultaneously so I have 6 varieties by October... Extract will let me do it quicker than AG

AndrewQLD: I subbed in Hallertau and Saaz due to unavailability of Spalt... Although I have just found it online...

Of course not! :lol:

Nah, just stick with what you already have is what i meant by not noting them.. i'd just go a 60min addition as this beer is malt focused but its up to you.
