So once I install a Digital, Dual Auto Thermostat and small heater in my fridge the fridges own thermostat become irrelevant?

Even if it dies?

This appears to be my experience in my fermentation fridge so I am now considering installing the same in my keg fridge as it's temperature is all over the place and I suspect the thermostat it on it's way out?

I assume that you are talking about the thermostat dying rather than the fridge.

I would expect that it depends on how it fails.

If it fails in way that leaves the fridge thinking the temperature is too high and it has to cool, then your digital thermostat that controls power to the fridge will essentially provide you with a fridge that only refrigerates down to the temperature you set.

If however the thermostat fails where it reports back that the temperature is lower than what it really is, even with your digital thermostat you won't get below the value that the internal thermostat cuts out before it cools down to your set temperature.

All of this is of course dependent on the ambient temperature as it may enable you to reach your desired fermentation temperature and you might get the heater kicking in.

Also, thermostat can be bypassed so that it will cool whenever it is on. Just make sure you know what you are doing before playing with the wires.
 
So whats the best keg fridge set up if you want to keep it bang on say 3c?

I fixed a bar fridge that had a thermostat making it "always on" with a stc-1000
Hard wired it into the fridge and installed it in the corner of the compressor area at back of fridge.
wiring diagram of the fridge was on a sticker on the back of the fridge :kooi:

sorted the fridge out nicely and it's currently cold chilling some ginger beer for kegging :)

only issue is it is at the back of the fridge if i want to change temps....
