I have been reading about ice wines and want to try making one next season. Of course I won't be able to find grapes frozen on the vines in Adelaide
So I was thinking about just using the freezer.
I'm not sure the best way to do it - whether to freeze the must then press with a basket press? Or freeze the grapes whole then crush and press? Or just freeze the juice and skim out ice crystals?
Has anyone done this, with grapes or anything else?
