Fly Sparging Temperatures

Gday everyone,
Well I was halfway through a brew session all going well. I think my sparge water was way too hot. I heated my sparge water to around 90' celcius then began my sparging (Fly Sparging). This was too hot. So i have had to stop my sparge and wait until the temp comes down.

Do you normally fly sparge with the same water temp as you infuse your grains with.
I think this is what i will do next time.

With fly sparging, you want your grain bed to sit around 72-77 deg C. I always aim for around 72 by sticking a thermometer a few inches into the grain bed. Your sparge water temp may vary a bit as it needs to be hotter to overcome the mash temp of the grainbed.

The lower temperature of 72 lessens the chance of tannin extraction. The higher temperature of 77 stops enzyme activity.

If you are using a sparge arm, as the water sprinkles it will drop a few dregrees.

I use to sparge at 80 degC when i did fly sparging because it would use so much heat on its movements from the HLT to the sparge manifold. It is likely, depending on your setup, you could lose 10 degC or so as well. You should be aiming for no more than 76 DegC water hitting the top of the grain. Any more than this and you could be leaching excessive tannins from your grain.
I would dare to say that 90 DegC is too high.

I thought this as much have udjusted my equipment. My gear is unusually efficient oh well all is good.

I used 75-80 degree water and grainbed remained 68-69 through out.
Worked for me
