I have a kit of coopers mexican and 1kg of coopers sugar. can anyone recommend a type of specialty grain to steep for "freshness"? It's the first time using grains and am a bit confused...I am very satisfied with what I've brewed in the past. Any help would be greatly appreciated. andysat.

From the look of your recipe you'll want something very light such as carapils for more body and head retention. Thoung I wouldn't use too much in your brew if your after a mexcian cerveza as it should be light in body. Carahell is a little darker (but still relatively light) and will add some flavour and aroma as well as body.

If you are after freshness & a clean odour...maybe you should try not drinking beers in the toilet.
