Hi Guys

About to do my first Extract Brew and have a couple of questions .

I have the ingredients to do Neills Centenarillo Ale , and was wondering about he hop additions .

1 : As the recipie says 20g centennial @ 30 mins . Is this the first addition ? if so does this mean the boil lasts for 30 mins ?

or have I got it all backwards and the first addition is Amarillo @ 10 mins ? if so how long is the boil for ( 30mins or longer it doesnt say in the recipie ) ?

I do it like this (hope it's right!)

When boiling put timer to 60 mins. Put hops in at what the timer says. ie. if the the hops say @45, when the timer reads 45 (to go) put them in.
 
Boils should be at least 60 min long, regardless of hop additions so if hop additions are for eg 20g @ 30 min& 10g at 10 min then simply bring wort to boil and set timer for 60 minutes. when there's 30 min left add your 20g and keep them in for the remainder of the boil. when 10 min left add your 10g for the remainder of boil.

So im going to boil 5 liters of water with the can of LME for 30 mins before adding hops ?

doesnt call for any grain in this one ?
 
With no grain you can cut the boiltime as indicated as it is not really necessary to boil the can at all.

For best hop utilisation you need approx 100g LME per litre so probably for 5 litres of water then you would only need a bit less than half the can.

I always use dried malt extract for hop boiling it makes life easier and less messy than wrestling the cans of extract.

Ok the recipie is as follows

2 x 1.5kg Coopers LME tins (pale)
500g Dextrose
20g Centennial @ 30 min
40g Amarillo @ 20 min
40g Amarillo @ 10 min

Im going to use a 1/3 of a can of LME or (equiv in LDM ) to boil hops
starting with the 20g centennial when it starts to boil then 10 mins later add
40g Amarillo then 10mins later add anothher
40g Amarillo Then 10 mins later shut the heat off .

Then add the rest of the LME together with the wort into the fermenter add water and cool to pitching temp ?
 
I add the rest of the LME at 5 mins or at flameout so it gets sanitised. It isnt really needed but better to be safe then sorry
 
I'd just use the dex in the boil, 500g in 5l gets you about 1040. What's the AA% of your hops?, if it's the same as mine your aiming for about 60IBU, if you post the AA I'll adjust it to about 35 or whatever you like or someone else will, I'll be back later. Cheers

Sorry guys might have given you a bit of a bum steer .

That was the the original recipie i went to the LHBS with but came home with the following

1 x 1.5 kg Morgans Lager pale extract
1 x 1.5 kg Morgans Caramalt amber extract
.5 kg dextrose

20g chinook @ 30 min AA 12-14 %
40g amarillo @ 20 min AA 8.6%
40g amarillo @ 10 min AA 8.6%

safale S-04 yeast

His take on Neills original I geuss

The notes I have says to aim for 30 - 40 IBU

That would be great if you could adjust it for me .

it's a bit hard to get a lot of hops in there with those times and high AA%, the first recipe is with the same times, the second with 15/5/0 min additions which is not unusual and what I'd go with. that different LME wont change the bitterness but will change the bitterness ratio so I've gone to the high side of 30-40. it assumes 5L boil with 500g dex and 23L batch, good luck, cheers
