After not brewing for some years, I brewed a couple of Coopers kits to get back into the hang of things. A couple of weeks ago I discovered ESB kits and tonight I bottled my first one. A Bavarian wheat beer. It smells beautiful, was simple to do, but now I want to do more.
Looking forwards to trying a few refinements like dry hopping and experimenting with flavours.
:icon_cheers: I can see a beer future coming on. Any suggestions as to where to start would be appreciated.
 
I am still trying kits out but have done 1 extract brew that turned out great, slightly underhopped in hindsight but that was to be expected using 'teabag' hops from my LHBS. What kind of beers do you like?
 
Have just spent four days away visiting a few microbreweries and tasting beers to try and understand the flavours that I like.
Loved a red ale that we tried that I would love to replicate. Also my partner fell in love with a dark IPA full of chocolatey complex flavours. Basically love German wheat bears and smoked ales.

Otways / Great Ocean Road, Prickly Moses from the Otway Estate near Colac, currently experimenting with a wild hop beer, and a new microbrewery/cafe at Forrest open 6 weeks and looks promising , a very pleasant Ale and good bowl of soup. If this trend continues traveling in Oz will become civilized no more VB over a half stale pie :) (although did have backup homebrew in the esky!)

I don't mind Prickley Moses beers. We used to stock them in a little restaurant I worked in in Melbourne. Was it their red ale you liked so much? That was always my Friday knock off drink :D I used to enjoy their stout too. From where was the IPA your wife liked so much?

As for suggestions about where to start with your brewing, it's seems like you have a fair idea of what you like, so keep going with it. Coming into winter, you might like to do some red ales and IPA's etc, if you enjoyed them so much. Plenty of extra things you can do to kits to make them better. Heaps of recipes and suggestions around this site.

Where abouts are you located?
 
IPA was from prickly moses as well. We live in NE Victoria, near Lake Eildon. Winters are freezing here so have rigged up the keg with a heating element.
Have just put an ESB smoked ale kit on last night. The dear lady had it in Germany and loved it. Smells very spicy, so will be interesting. Bit worried, bubbled straight away last night, this morning seems to have stopped. Will assess again tonight. Red ale is definitely the one we will try next. Any suggestions ?
