My first brew ended up down the sink after an infection so I'm pleased to announce that my second and third were a great success.

I did a milk stout and an Australian lager. Stout was 2 weeks post fermentation and lager only 10 days. Both were better (IMHO) than the shoite you can buy at the local bottlo. And you guys say they get better. Can't wait. Even SWMBO was impressed with her lager.

I only put 1 bottle of each in the fridge as a "1 a week" tester and now I'm torn between hooking in and waiting. Think I will still do the 1 a week for at least a couple if weeks. I almost don't want to drink it as if I do it will soon be gone.

Next question. Going to put a half bottle of chocolate vanilla extract in my next batch of stout and the LHBS guy said to put it in after fermentation has finished. I'm understandably nervous about taking the lid off for the risk if infection so could I put it in through the airlock hole with a syringe (the baby feeder type)? Was planning to do it a day before bottling.
 
A ) Good luck with keeping them and waiting, I fail at that every time
b ) Taking the lid off will be fine, people do it all the time to dry hop or add other random stuff
 
Congrats, first of many. Don't worry they'll get better.
Don't fear taking off the lid late in the ferment. The longer you brew the more confident you'll feel about it, just don't drop your cat in there and you'll right.
 
Keep on drinking mate, just make sure you brew enough to keep up.

Only take the lid off for as long as it needs to be off and you'll be right. Get the missus to hold it why you add the extras in.

Cheers guys.

I've got two batches of stout bottled and one to bottle next weekend so should be ok.
