The Maltida Bay brewery doesn't brew the Fat Yak any more, if they devoted their entire production to Fat Yak they wouldn't be able to produce 1 months worth of supply.
Like all beers, the quality/flavour is going to vary considerably dependant on Pub turn over & line/tap cleaning management.

Had one today on tap with lunch.
Pleasantly surprised, creamy white head that persisted the entire glass, nice aroma, lots of hop flavour, bit of sweet malt and a crisp clean finish.
I was burping hops for a good hour after.

I agree it's very inconsistent. When I first tried it, mediocre. Has ranged from awful to very good since then. Would wager that a lot of that is due to the way venues handle their kegs and clean their equipment as per what Ross said. Tastes like mainly a cascade based beer with some sauvin up late and maybe dry hopped, but doubt it.
