Howdy Brewers

After my first experiment with Mead in a measly juice bottle I have stepped up the the proverbial Mead brewing plate. The wife got me 15kg if honey from the markets yesterday so now I am prepared lol. I have used two fresh wort kit containers to hold the golden hewed liquid in approx 12L batches.
The recipe for this is super simple, people may rag on me about this but it is based on my previous experiment:
- No.1 is 300g/L
- No.2 is 370g/L
and SN9 yeast.

It is a shame Mead takes so long, but I will give a review in due course.

What sort of recipe and yeast do you use for your "plain" Mead????

Plain mead is just honey + water + yeast. For the yeast, I've not been disappointed by champagne yeast - a good all-round performer that doesn't seem particularly bothered by the weather. First go, it's best to go for a sweet mead (high gravity, designed so some honey will be left over after the wine must ferments out) - my biggest disappointment so far was a dry mead I brewed. So be prepared to adjust the gravity if it's too low.
