I struggle to think how much DME I've used for starters over the years, but it's quite a bit. Most of it has been from craftbrewer, and this one time I bought a 25kg Bintani bag and split it with some guys. Both looked and behaved the same.

Late last year I found myself without starter DME and I got some Coopers DME from Dan's. It's a much finer powder, which resulted in a lung full of DME and a slow dissolve. It also seems to boil over way easier than the generic DME I've used before. As in I cannot keep a 2l starter in a 3l flask boiling without a boil over. I just did two WLP400 starters and even they frothed during store plate ferment, which I've not seen on my vigorous (say WLP300) starters previously.

Do others find this? It really surprised me that there could be such a variance in something as seemingly simple as DME.
