hi just done my first coopers toucan stout it came out way to bitter for my liking is there anything i can add before kegging to get bitterness down?
 
Lactose may work, used in milk stouts. Non fermentable sugar which you may be able to chuck straight into the beer without any further fermentation. Not 100% though.

I would add some lactose and some fermentables probably dark sugar for molasses and more yeast and ferment it again. Then bottle and age for 1 year min as a barley wine. This may not be feasible if you are really thirsty :)

I made one of these once.... :D

Bottled it rather than kegging tho.

It took a good 12-18 months in the bottle mellowing before it was drinkable.... :blink:

(Made it in 2002, is now absolutely fantastic! Luclilly I gave a case of it to my dad, who didn't drink it. :beer: )

If you have a large enough pot (~10litres) add some water and boil the kits ? It's meant to get rid of some of the hop bitterness which might be part of the drama...maybe :unsure:
 
That's a great idea!

You may need to keep some of the original if you are going to keg it with sugar. This would be used to Krausen the beer.

You can just just chill and gas for two days which would mean you don't need to Krausen.

If you boil I personally would late hop with a low bitterness hop like goldings, boil some pellets for 5 minutes and then strain, should give you hops flavour rather than hop bitterness. You could even use Saaz if you wanted to get a bit whacky :)
 
Agreed! I wouldn't highly carbonate stout myself just enough to condition the beer. SOme can't resist the two days of gas with a keg as it's on really quickly. Highly hopped beers and I mean really highly hopped I always bottle and age. I find my pressure barrel works well with real ale and stouts but I can only get about two pint per day. I suspect a leak.

I just made one of these using a Cooper's Stout and a Coopers Dark Ale. I added 150gm of pale choc malt, and 1 month after bottling is very drinkable. It won't be ready for a few months yet, but it's not too bitter at all. Doesn't have that acrid aftertase that I have tasted with some double can brews, either.

I did one of these a couple of months back, with coopers stout, dark ale and 500g brown sugar. I have to say it's deadset fantastic, but I'll be swapping the sugar next time for some choc malt. Too hard to let it mature... it tastes sooooo good!
 
I did also once shandy an average brown ale I made early on in my brewing career with a 2 blocks of mid-strength beer. By this I mean I mix one stubby with one can in a stein and drunk fast. The can was old and on special. I didn't even change the yeast, I remember thinking hey 10 cents a bottle. The things you do when your a poor student :) This could be done with a very hoppy beer.
