Hi All,

Firstly.... Have you tried Bruce Cost ginger Ale? If not... get on it.

Its an unfiltered GInger Ale, that reminds me more of a ginger beer then ale... Its delicious.... and its stupidly expensive... Something like 16 bucks a 4 park from the supermarket. It is sweet with a good ginger bite.

So obviously.. I'd love to do 19L batches of the stuff and have it on tap

Ingredients in order:

Water, Cane Sugar, fresh ginger and citric acid.

10grams of sugar per 100ml

Ginger root itself contains about 2 grams of sugar per 100grams

Citric acid can be used as a preservative as well as an acid/souring agent... No idea how to use it, or if to bother.

I'm assuming its not going to be as simple as bunging 1kg of ginger in 19L of water with 1.9kg of cane sugar.

Anyone have some good ideas on how to get something close? I'll probably start doing small batches....

I'm a bit wary.... I made an alcoholic ginger beer that turned out to be a hot bottle of spicey rocket fuel... This one is unalcoholic...... for now anyway
