Hi, Looking to brew a Saison and I am using the recipe in Brewing Classic Styles page 208-209 for some inspiration.

The recipes in the book target the extract brewer with an all grain option.

The all grain option gives the equivalent malted grains to replace the liquid malt extract but makes no mention of the cane sugar addition or the caramunich steeping grain.

I assume that these should be included in the all grain version.

Can anybody who has the book and can venture a suggestion, it would be great - Cheers
 
The all grain option says which grains to use to sub out the extract, the sugar is not mentioned so put it in as per the first recipe. The cara goes into the mash.

Thanks, that's the way I interpreted it, just needed a second option - Cheers
 
As above - I've always interpreted the book to mean only the extract and base grain are interchangeable - evrything else remains as is. That's how I would move between AG and extract/spec grain regardless.
