Brew Tastes More Like Wine Than Beer?

Hey guys,

My 4th brew is done and in the fridge and being consumed...

This time i tried a different flavour, i cant remember the name but its slightly darker than i usually drink. My problem is its still tasting very wine like, well i personally when i drink wine i cringe a little from the sour sorta taste... its almost the same with my brew, not as strong though. It seems to be as strong as beer but its not tasting that much like beer.

IS this normal because its home brew from a kit ? or...?

I know people have told me if its sour then the equipment isnt clean, but i scrub hard and sterilize and all that im very careful with cleanliness of the equipment....

Anyone shed some light on this?

Hmmm...sometimes using regular supermarket sugar instead of dextrose (or brewing sugar) can give you a real cidery effect (sweet and a little pungent) - particularly if you added a bit too much into the fermenter at the start. Never had a beer that tasted like wine though!

If you can't stomach drinking it right away. Put it down in the cupboard for a couple more weeks or even a month then taste it later - sometimes the funkiest tasting brew can improve with a little aging. Strange but true.

Well that could be the prob.... i use just normal white sugar. Next time i'll go dextrose !

Wine like is a pretty broad characteristic. Is it dry or sweet.

Dryness could come from too much sugar and sweetness coud come from under attenuation of the yeast

If you ferment to high the beer will have a lot of fruity esters. Maybe the fruity taste is what is making you think its wine like.

Try fermenting at the right temp for your yeast.

A whole kilo of dex will give you a rather dry beer.
I would use kg dex and kg dry malt, and see if you like the taste better.
If you do, then keep increasing the malt until you get it to where you like it.

Or buy a beer enhancer which has dextrose, DME and hops....
