Does anyone out there know of any good, preferably free programs that i could download to record my brews?

Adjuncts are anything in beer that is not barley, hops, water or yeast (eg the following are adjuncts - wheat, the oatmeal in an oatmeal stout, the fruit in a lambic, the coriander in a wit)

Pitch Temp is the temperature the yeast is pitched at.

Pitch SG looks to me like what original gravity of the beer would have been assuming a 23L batch. It appears that the pils ended up @ 21L, which explains the higher gravity reading before fermentation of 1.050. If 21L @ 1.050 was diluted to make 23L, it would have an OG of 1.045.

Ex. Temp. is the external temperature the fermentation was run at. To get it this consistent, you'll need a temp controlled unit.
