so I making the coopers saison can recipe for the 5th time . it makes a pretty decent saison for $2.50 a longneck

  • 1.7kg Australian Pale Ale
  • 1.7kg Thomas Coopers Wheat Beer
  • 500g Coopers Light Dry Malt
  • 25g Saaz Hops
  • 11g Belle Saison Yeast

OG was 1054 which is very close to what I have got before . fermented at 22

in past times it has stopped at 1002 after a week . this time it camped at 1008 after week and a half. and has been there for a week . so it seems like its done . tastes good . a little sweeter than before


still seems high for belle saison though so I'm a bit nervous to bottle this weekend


what you reckon ?
 
Throw another package of yeast at it. Maybe was an old pack or not as viable or something.
If it's a repeatable recipe then I'd trust your gut and not bottle.
