Maybe try starting yoy're ferment 2 degrees c lower & then raising the temp 2 degrees over 2 days

25L Pail fermenter user here

Benifits: stackable and nestable and easier to clean. Put a bung in it, put everything in the pail filled with Pbw, including the lid!
Con: can't use glad wrap, not 30L so great for 20L batches

And because I use a fermenter thermowell I *want* a lid.

To the OP airlocks are fine, I prefer two-piece airlocks. Super easy to temporarily break the airlock for taking samples/bottling etc to prevent back flow.

I fill with starsan, it's more sanitary and the bubbles stick around longer.
