Regarding the grain, if you did your tests with an equivalent amount of water (say you use 5kg and dough in with 17L, use 23L of water) I would be surprised if you need to retune when adding grain.

More gain will definitely help smaller step response. If your lag time is more than 30s or so you may get some overshoot with P only.

My advice is try to get it as good as you can just with P. You will find it gives you a lot of power to influence the response. D can be tricky to get right, and will likely take a lot of structured re-testing. I believe simplest is best, but see how you go.

My previous PID settings had D as fairly minimal. I'm hoping to get accurate results using just P this time. I've tweaked my PID algorithms a little and it seems a lot more accurate.

I'm looking at D as a last resort, and my previous settings basically ignored I. :D
