Advice On A Pale Ale Recipe

I'm trying to work on a pale ale using New Zealand hops. Does anyone have experience with Riwaka? I want this to be a hop bomb. What are your guys thoughts?

No experience with Riwaka whatsoever but to get great hop flavour, try splitting your flavour additions up from 25 minutes to 0 so you are adding a smaller portion every 5 minutes or so* and use some gypsum in the mash and boil.

* As in 5g@25, 5g@20, 5g@15, 5g@ 10 etc down to 0. May need to adjust recipe to hit required IBU.
 
That's an alot of Riwaka (D-Saaz). Have only made 1 brew with it - love the flavour, I wouldn't use it as a bittering hop at all given it sits around 6% aa, rather save it for flavour and aroma.

This recipe is similar to one recommended by RandyRob - he used Magnum for bittering and went late with the D-Saaz - works out a treat.


D-SAAZ (American Amber Ale)

Original Gravity (OG): 1.050 (P): 12.4
Final Gravity (FG): 1.013 (P): 3.3
Alcohol (ABV): 4.91 %
Colour (SRM): 15.6 (EBC): 30.7
Bitterness (IBU): 32.8 (Average)

88% Maris Otter Malt
10% Crystal 120
2% Carared

0.6 g/L Columbus (14.2% Alpha) @ 60 Minutes (Boil)
1.1 g/L D Saaz (5.4% Alpha) @ 15 Minutes (Boil)
1.1 g/L D Saaz (5.4% Alpha) @ 3 Minutes (Boil)


Single step Infusion at 66C for 60 Minutes. Boil for 70 Minutes

Fermented at 20C with Safale US-05
 
thanks for the replies.

What malts would be recommended for this style of beer and hops (Cascade & D-Saaz)? I want the beer to be fairly light in colour using a mix of ale and pilsner base malts. I'll be purchasing from grape and grain, having the option of; Briess, Dingemanns, Joe White, Simpsons and Weyermann. I've only ever used JW and unfamiliar with the different characteristics of each variety. Preferably something with a bit more taste to penetrate through all those hops.

I have made this a few times. Quite good and a nice body. Maybe sub the d-saaz for the simcoe and a little bit late with the cascade. Options are endless, this is just a suggestion.
 
My beer for the last case swap was a riwaka SMaSH with bb ale & the wlp Aussie ale yeast. I can't remember the hop schedule but I've brewed the same beer but with only a 60 min addition which had an amazing amount of flavour & aroma considering there were no late hops. It's an awesome hop.

I'd drop the pils if I were you & either use all ale malt or maybe 5% crystal. The cascade will work well with it but if you really want to get a feel for riwaka then I'd say go all riwaka. Or you could leave the recipe as it is & make an awesome beer.

ahh.. i did a lot of my research and used previous recipes from American forums using imperial units, so I'm familiar with appropriate mash temperatures in F. I probably should have converted the units seeing this is an Australian forum but was careless.

Nige at brew Adelaide has moteuka on special I believe. You may not get free delivery but I reckon he could get them to you.

I got it from grain and grape. It may be called saaz b. The riweka were flowed too which was cool.
You could always get an order from craftbrewer, as they have a massive variety and a decent price.
