Adding Lactose

Hi there,


At which stage would one add lactose to their brew if wanting to sweeten it up a little?, I guess this would be more in the case of Cider or Ginger Beer.

Anytime - all it does is add sweetness that the yeast can't metabolise.
 
buy some lactose, taste it and tell me how sweet it is.
 
A smidgin of bugger-all is the correct answer. The body lactose provides far outweighs its sweetness.
 
If Lactose is really not that suitable as an ingredient to give a ginger beer a natural sweetness, what alternatives are there?

I have used lactose in making milk and cream stout

because I like to have a variety I usually do after bulk priming

ten bottles with straight brew
ten bottles with 5 grams per bottle -- milk stout
ten bottles with 10 grams per bottle --- cream stout

the body is a bonus

I would say the sweetness is not the big issue , more a smoothness or mellowness , not as medicinal
