are these equivalent to STC 1000 in functionality?
 
From everything I've read, yes
However they don't use the same firmware as some of the STCs, so you can't load the STC1000+ firmware
 
I haven't gotten into firmware yet, so no worries there.

I've just been caught before where the cheaper versions of the STC's will only switch one circuit (i.e. heating OR cooling, not automatic). That's fine for fridges or HLT's, but no good for fermenting.

I also got caught on the Mangrove Jack's controller, wanted it for the HLT but it'd only go up to 40°C. There might be a somewhere to enable it to go to its full range, but even then I think it'll only control up to 70°. Had to swap controllers around a bit to make sure I can do what I want.

do these come with the steel probe or the rubberised one?

What's the difference between the itc-308 and the 310?

AFAIK, the 310 has profiles for raising and lowering temp over time

I just received my 310T plan on using it with my 30L boiler and a BIAB setup for controlled temp mashing and then plug it into my Fermenting fridge for temp control :)
 
Just remember it's a thermostat, not a PID
it will shut off AT a set temp, not coming up to and maintaining a temp
you may have potential heat rise after the controller shuts off

Hey yeah thanks for the tip

Its mainly to help maintain temp will do some testing to see how much temp creep I get. Just saved me wiring up a pid and was mainly for the temp fridge
