15 Min Boil for Berliner Weisse (Yes or No?)

Hello,

ive brewer a BW three times wuth the Jamil recieoe as the guide. Each time ive boiled for 15 mins with 50% pils in the grist. Result: DMS in the final prroduct.

Have any members brewed this beer with a 90 min boil?

I've only made it with no-boil, and didn't have any DMS issues.

IIRC Most of your DMS is formed at boiling temperature, so if you never reach a boil you won't create the DMS in the first place.

I've only made 2 BW using a sour mash and a 60 minute boil. No problems.

Have a look at this thread on BW I've done it a couple of times now with a quick boil, never had an issue with DMS

I think Felten is on the money, no boil = no DMS.
