    Tips needed- starting up again

Hi there Guys, Now the weather is cooler again in QLD, I am giving the home brew another crack. I was brewing last year but as the weather began to get warmer the beer was tasting rubbishy so I gave it away for the summer, ( no fermenter temp control). I never had any issues with infections etc...

    Ale FG too high

The FG comes out 1015 usually, after 7 days. Then i put in the cube for 2 days before kegging. The yeast comes with the can from the Home brew shop. Will it help to use more yeast ?

    High FG

Put down a morgan's wheat beer last Sunday, with 750g blend from my HB shop, FG is supposed to be 1010. After 7 days it is still 1020 Any idea's why that would be? He says it should be all done in 5- 6 days.

How do you gas your kegs?

I have been gassing my kegs for 24hrs at 40psi, then back off to around 10 psi pouring pressure. My last beer started pouring flat. Good head when first poured then a flat lifeless beer. Is 24 hrs long enough? Or could something else be wrong

    Gassy beer

Think so, My LHBS guy suggests these beers can be done at 1010 So i let it get to that, usually 6 days in fermenter. Then into cube in fridge for 3 days, and check a couple times if there is a gas build up, by letting pressure off the cap a bit Always make sure its (flat) before kegging,
